Marinated Steak:
- 1 lb flank steak, trimmed and sliced thin against the grain
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp smoked paprika
- 1 lemon, juiced
- 1 tsp salt
- ½ tsp black pepper
Additional Ingredients:
- 2 cups cooked quinoa or brown rice
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ½ red onion, thinly sliced
- ½ cup kalamata olives, sliced
- ½ cup crumbled feta cheese
- ¼ cup fresh parsley, chopped
- ½ cup hummus
- Optional: lemon wedges for serving
Instructions
- Marinate the Steak: Combine olive oil, garlic, oregano, smoked paprika, lemon juice, salt, and pepper. Add the steak slices, coat well, cover, and refrigerate for at least 30 minutes.
- Cook the Steak: Heat a skillet over medium-high heat. Cook the marinated steak slices for 2-3 minutes per side until browned. Remove from heat and let rest.
- Prepare the Bowls: While the steak cooks, assemble quinoa or rice in bowls. Top with steak, tomatoes, cucumber, red onion, olives, feta, hummus, and parsley.
- Serve: Garnish with lemon wedges if desired.

- For a low-carb version, use cauliflower rice instead of quinoa or rice.
