Description

These Mediterranean Steak Bowls are a flavorful and nutritious meal option that combines tender marinated steak with a variety of fresh vegetables, grains, and tangy feta cheese. Perfect for a healthy and satisfying dinner!

Marinated Steak:

  • 1 lb flank steak, trimmed and sliced thin against the grain
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 1 lemon, juiced
  • 1 tsp salt
  • ½ tsp black pepper

Additional Ingredients:

  • 2 cups cooked quinoa or brown rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • ½ cup kalamata olives, sliced
  • ½ cup crumbled feta cheese
  • ¼ cup fresh parsley, chopped
  • ½ cup hummus
  • Optional: lemon wedges for serving


Instructions

  1. Marinate the Steak: Combine olive oil, garlic, oregano, smoked paprika, lemon juice, salt, and pepper. Add the steak slices, coat well, cover, and refrigerate for at least 30 minutes.
  2. Cook the Steak: Heat a skillet over medium-high heat. Cook the marinated steak slices for 2-3 minutes per side until browned. Remove from heat and let rest.
  3. Prepare the Bowls: While the steak cooks, assemble quinoa or rice in bowls. Top with steak, tomatoes, cucumber, red onion, olives, feta, hummus, and parsley.
  4. Serve: Garnish with lemon wedges if desired.

Notes

  • For a low-carb version, use cauliflower rice instead of quinoa or rice.
  • You can grill the steak for added flavor.
  • Tzatziki can be used as a hummus alternative.
