- 1 pound smoked sausage, sliced into 1/4-inch rounds
- 1 medium onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced

- 2 cups chicken broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano

Instructions
- Heat the olive oil: Warm the olive oil in a large pot over medium heat to prepare for cooking the sausage and vegetables.
- Brown the sausage: Add the sliced smoked sausage to the pot and cook for about 5 minutes until the slices are caramelized and nicely browned.
- Remove sausage: Take the browned sausage out of the pot and set it aside for later.
- Sauté vegetables: In the same pot, add diced onion, red bell pepper, and green bell pepper; cook for 3 to 4 minutes until they become tender.
- Add garlic: Stir in the minced garlic and cook for an additional minute until fragrant.
- Add rice: Mix the long-grain white rice with the vegetables and garlic, stirring to combine well.
- Add liquids and spices: Pour in the chicken broth and undrained diced tomatoes. Add paprika, dried thyme, and dried oregano, stirring to fully incorporate all ingredients.
- Season: Taste and add salt and pepper as desired to enhance the flavors.
- Simmer: Bring the mixture to a simmer, then reduce heat to low and cover the pot with a lid.
- Cook rice: Let it cook for approximately 18 to 20 minutes until the rice is tender and the liquid is fully absorbed. Stir occasionally to prevent sticking.
- Return sausage: Add the browned sausage slices back into the pot and stir them evenly into the rice and vegetable mixture.
- Garnish and serve: Sprinkle with sliced green onions and chopped fresh parsley before serving hot.
