- 8 oz block feta cheese
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons olive oil (plus extra for brushing)

Phyllo Rolls
- 8 sheets phyllo dough, thawed
- 2 tablespoons unsalted butter, melted
Chili Honey
- ¼ cup honey
- 1 teaspoon red pepper flakes
- Pinch of salt
Instructions
- Preheat the oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.
- Prepare the feta filling: Crumble the feta cheese into a small bowl. Add chopped parsley, a drizzle of olive oil, black pepper to taste, and smoked paprika if using. Mix gently until combined.
- Assemble the rolls: Lay one sheet of phyllo dough on a clean surface and brush it lightly with olive oil. Place another sheet on top and brush again with olive oil to keep the layers moist.
- Fill and roll: Spoon approximately 2 tablespoons of the feta filling near the bottom edge of the layered phyllo sheets. Fold in the sides, then roll up tightly like a spring roll or cigar, ensuring the filling is securely wrapped inside.
- Repeat: Continue layering, filling, and rolling until all 4 rolls are made using the remaining phyllo and filling.
- Prepare for baking: Brush each roll generously with melted butter and place them seam side down on the prepared baking sheet.
- Bake: Place the rolls in the preheated oven and bake for 15–18 minutes until they are golden brown and crisp.
- Make the chili honey: While the rolls bake, warm the honey gently in a small saucepan over low heat. Add red pepper flakes and a pinch of salt and stir for 2–3 minutes to infuse the flavors.
- Serve: Remove the rolls from the oven and drizzle the warm chili honey over them just before serving for a perfect balance of sweet and spicy flavors.
