Phyllo Rolls

  • 8 sheets phyllo dough, thawed
  • 2 tablespoons unsalted butter, melted

Chili Honey

  • ¼ cup honey
  • 1 teaspoon red pepper flakes
  • Pinch of salt


Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Prepare the feta filling: Crumble the feta cheese into a small bowl. Add chopped parsley, a drizzle of olive oil, black pepper to taste, and smoked paprika if using. Mix gently until combined.
  3. Assemble the rolls: Lay one sheet of phyllo dough on a clean surface and brush it lightly with olive oil. Place another sheet on top and brush again with olive oil to keep the layers moist.
  4. Fill and roll: Spoon approximately 2 tablespoons of the feta filling near the bottom edge of the layered phyllo sheets. Fold in the sides, then roll up tightly like a spring roll or cigar, ensuring the filling is securely wrapped inside.
  5. Repeat: Continue layering, filling, and rolling until all 4 rolls are made using the remaining phyllo and filling.
  6. Prepare for baking: Brush each roll generously with melted butter and place them seam side down on the prepared baking sheet.
  7. Bake: Place the rolls in the preheated oven and bake for 15–18 minutes until they are golden brown and crisp.
