Instructions
- Preheat and Prepare the Pan: Preheat your oven to 375°F and lightly grease a mini muffin tin or financier molds to ensure the cakes release easily after baking.
- Brown the Butter: In a small saucepan over medium heat, melt the unsalted butter. Continue cooking the butter until it turns a golden brown color and emits a nutty aroma, about 4 to 5 minutes. Remove from heat and allow it to cool slightly; this browned butter will add a rich, deep flavor to the financiers.
- Mix Dry Ingredients: In a mixing bowl, whisk together the powdered sugar, almond flour, all-purpose flour, and salt to combine evenly all the dry ingredients.
- Whisk Egg Whites: In a separate bowl, lightly whisk the egg whites just until they become frothy. There is no need to whip them to stiff peaks; just ensure they are aerated for a light texture.
- Combine Wet and Dry Ingredients: Stir the frothy egg whites into the dry ingredients. Add the vanilla extract and browned butter, mixing gently just until all ingredients are combined to maintain a tender crumb.
- Fill the Molds: Spoon the batter into the prepared muffin tin or financier molds, filling each mold about three-quarters full to allow room for rising during baking.
- Add Toppings: Arrange a few pieces of finely diced peach on top of each filled mold. Optionally, sprinkle sliced almonds or turbinado sugar over the peaches for extra texture and sweetness.
