Instructions
- Preheat oven and prepare muffin tin: Preheat your oven to 375°F (190°C) and lightly grease a muffin tin to prevent sticking.
- Make the peach filling: In a small bowl, combine the finely chopped peaches, granulated sugar, ground cinnamon, all-purpose flour, and vanilla extract. Mix until well blended.
- Roll out puff pastry: On a lightly floured surface, roll out the puff pastry sheet into a 10×12-inch rectangle to create an even base for the filling.
- Assemble the filling on pastry: Brush the rolled-out pastry with melted butter, then evenly spread the peach filling over the pastry, leaving a small border around the edges for sealing.
- Roll and cut the dough: Starting from the longer side, tightly roll the dough into a log. Cut the log lengthwise in half to expose the layers.
