Ingredients
Scale
Vegetables
- 1 cup red bell pepper, finely diced
- 1 cup green bell pepper, finely diced
- 1 cup yellow onion, finely diced
- 1 jalapeño, finely minced, seeds removed for mild heat
- 1 garlic clove, minced
Pickling Liquid
- 1/2 cup apple cider vinegar
- 1/4 cup water
- 1/2 cup sugar
- 1 teaspoon salt
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon celery seeds
- 1/4 teaspoon turmeric
Instructions
- Prepare the vegetables: Combine the finely diced red bell pepper, green bell pepper, yellow onion, minced jalapeño (with seeds removed for milder heat), and minced garlic in a medium bowl and set aside.
- Make the pickling liquid: In a small saucepan, add apple cider vinegar, water, sugar, salt, mustard seeds, celery seeds, and turmeric. Bring the mixture to a gentle boil over medium heat, stirring until the sugar dissolves completely.
- Simmer to bloom spices: Reduce the heat and let the pickling liquid simmer for 2 minutes to allow the flavors of the spices to fully develop and infuse into the liquid.
- Combine pickling liquid and vegetables: Carefully pour the hot pickling liquid over the prepared pepper and onion mixture. Stir thoroughly to coat all the vegetables evenly with the hot brine.
- Cool and refrigerate: Allow the relish to cool to room temperature. Then transfer it to a clean jar with a tight-fitting lid and refrigerate for at least 4 hours before serving to allow the flavors to meld and intensify.
- Serve and enjoy: Use this tangy and sweet relish as a topping for hot dogs, burgers, sandwiches, or grilled meats to add a fresh, flavorful kick.
Notes
- This relish keeps well for up to 2 weeks when stored in the refrigerator.
- For a sweeter relish, increase the sugar to 3/4 cup.
- To add more heat, include an additional jalapeño or a pinch of red pepper flakes.
