Description

This Ranch Fiesta Dip is a creamy, flavorful appetizer perfect for parties and gatherings. Combining cream cheese, ranch seasoning, fresh bell and jalapeno peppers, black olives, and sweet corn, this dip brings a vibrant mix of textures and tastes. Easy to prepare in just 10 minutes and chilled to perfection, it’s a crowd-pleaser that’s great served with pita chips, pretzels, carrots, or tortilla chips.

Ingredients

Scale

Vegetables

  • 1 red bell pepper, diced
  • 1 jalapeno pepper, seeds removed and diced
  • 1 small can black olives, diced
  • 1 can corn, drained

Dairy

  • 2 packages (8 oz each) cream cheese, brought to room temperature

Seasoning

  • 1 packet ranch dip seasoning mix

Instructions

  1. Prepare the Vegetables: Remove the seeds from the jalapeno pepper to reduce heat, then dice the jalapeno, red bell pepper, and black olives. Place them in a large mixing bowl.
  2. Add Cream Cheese and Corn: Add the softened cream cheese and the drained can of corn to the bowl with the diced vegetables.
  3. Mix in Ranch Seasoning: Sprinkle the ranch dip seasoning mix over the ingredients in the bowl. Using a spoon or mixer, thoroughly combine all ingredients until the mixture is smooth and evenly mixed.
  4. Chill the Dip: Cover the bowl and refrigerate the dip for at least 1 hour to allow flavors to meld and the dip to set to a creamy, spreadable consistency.
  5. Serve: Serve chilled with your choice of pita chips, pretzels, carrots, or tortilla chips for dipping.

Notes

  • For a spicier kick, leave some jalapeno seeds in or add extra jalapeno.
