Instructions
- Prepare the filling: In a bowl, combine the finely chopped corned beef, well-drained sauerkraut, shredded Swiss cheese, and 1/4 cup Thousand Island dressing. Mix thoroughly to blend all flavors.
- Assemble the egg rolls: Lay one egg roll wrapper on a clean surface oriented in a diamond shape with a corner facing you. Spoon about 2 tablespoons of filling onto the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides, and roll tightly towards the top corner. Seal the edge with a small dab of water to keep it closed. Repeat until all wrappers and filling are used.
- Heat the oil: Pour about 2 inches of vegetable oil into a deep skillet or saucepan and heat to 350°F (175°C). Use a thermometer to maintain the temperature for even frying.
- Fry the egg rolls: Fry the egg rolls in batches, turning occasionally to cook evenly for 3 to 4 minutes or until they turn golden brown and are crispy on all sides.
- Drain and serve: Remove the cooked egg rolls from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with extra Thousand Island dressing for dipping.

- To bake instead of fry, brush egg rolls lightly with oil and bake at 400°F (200°C) for 18 to 20 minutes, flipping halfway through for even crisping.
