Savory Breakfast Pop-Tarts are a delicious homemade hand pie filled with scrambled eggs, bacon, cheddar cheese, and chives, perfect for a hearty breakfast or brunch.

Pie Crusts:
- 2 refrigerated pie crusts
Egg Mixture:
- 4 large eggs
- 1/2 cup shredded cheddar cheese
- 4 slices cooked bacon (chopped)
- 2 tablespoons chopped chives
- 1 tablespoon milk
- Salt and black pepper to taste
Egg Wash:
- 1 egg (for egg wash)
Instructions
- Preheat Oven: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Prepare Crusts: Roll out the pie crusts and cut each into 6 equal rectangles. Whisk together 4 eggs, milk, salt, and pepper.
- Cook Eggs: Cook the eggs in a skillet until scrambled. Allow to cool slightly.
- Prepare Filling: In a bowl, combine scrambled eggs, bacon, cheddar, and chives.
- Assemble Pop-Tarts: Place 6 crust rectangles on the baking sheet. Spoon the egg mixture onto centers. Top with remaining crust rectangles and crimp edges.
- Egg Wash and Bake: Brush the tops with egg wash. Bake for 20–25 minutes until golden brown.
- Serve: Let cool slightly before serving.
Notes
- You can substitute sausage or ham for bacon.
- Add hot sauce for extra spice.
- Pop-Tarts can be made ahead and reheated.
