Seasonings and Oil

  • 1 tablespoon olive oil
  • 1 bay leaf
  • ½ teaspoon chili powder
  • ½ teaspoon cumin powder

Instructions

  1. Heat the oil. Heat a small pot over medium heat and add the olive oil. Allow it to heat until shimmering but not smoking.
  2. Sauté vegetables. Add the diced onions, minced garlic, and diced bell pepper to the pot. Sauté for 3 to 4 minutes until the vegetables soften and become fragrant.
  3. Add seasonings and beans. Stir in the chili powder, cumin powder, kosher salt, and bay leaf. Then add the canned black beans with their liquid. Optionally, add ¼ cup water to adjust the bean consistency, adding more if desired.
  4. Simmer beans. Bring the mixture to a light boil, then reduce the heat and cook for 10 minutes, stirring every few minutes to prevent sticking and blend the flavors. Remove from heat and discard the bay leaf before serving.
