Description

A vibrant and easy one-pan meal featuring tender roasted sweet potatoes, tart fresh cranberries, sweet apple slices, savory sweet apple-flavored chicken sausage, and aromatic onions, all baked together for a perfect blend of flavors and textures.

Ingredients

Scale

Vegetables & Fruits

  • 3 medium sweet potatoes, peeled and diced small
  • 6 ounces fresh cranberries (about 1 1/2 cups)
  • 1 large apple, sliced
  • 1 medium sweet onion, sliced in wedges

Protein

  • 1 pack sweet apple or cranberry flavored chicken sausage, sliced

Seasonings & Oil

  • 1 tablespoon olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Cinnamon, to taste (a little goes a long way)

Instructions

  1. Preheat the Oven: Set your oven to 425º F (220º C) to prepare for roasting the ingredients evenly.
  2. Prepare the Ingredients on the Sheet Pan: Place the diced sweet potatoes, fresh cranberries, sliced apple, sliced sweet onion, and sliced chicken sausage on a large sheet pan. Drizzle all the ingredients with olive oil, then sprinkle with salt, pepper, and a pinch of cinnamon for warmth and depth. Toss everything together on the pan ensuring each piece is lightly coated with oil and seasoning for even roasting.
  3. Bake Until Tender: Place the sheet pan in the preheated oven and bake for 25 to 30 minutes. Check for the sweet potatoes to be tender by poking with a fork. Once cooked through, remove from the oven and serve immediately, enjoying the mix of roasted sweetness and savory sausage.

Notes

  • Use a sweet apple variety like Fuji or Honeycrisp for the best flavor contrast.
  • If fresh cranberries are not available, frozen can be used but may add extra moisture.
  • Adjust the cinnamon amount carefully as it can overpower the dish.
  • Make sure to cut the sweet potatoes into small even pieces to ensure they cook through within the given time.
  • This dish is best served fresh out of the oven for the optimal texture and temperature.
