Grit Bases

  • 1 cup stone-ground grits
  • 4 cups water
  • 1 teaspoon salt
  • 1/2 cup shredded sharp cheddar cheese
  • 2 tablespoons unsalted butter
  • 1/4 teaspoon black pepper

Shrimp Topping

  • 1/2 pound shrimp (peeled, deveined, tails removed)
  • 1 tablespoon olive oil
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 clove garlic (minced)
  • Chopped fresh chives for garnish


Instructions

  1. Prepare the grits: In a medium saucepan, bring the water and salt to a boil. Slowly whisk in the stone-ground grits, then reduce the heat to low and let simmer for 20 to 25 minutes, stirring frequently, until the grits are thick and creamy.
  2. Add cheese and butter: Stir in the shredded sharp cheddar cheese, unsalted butter, and black pepper into the grits until fully melted and combined. Remove from heat and allow to cool slightly.
  3. Form grit bites: Lightly grease a mini muffin pan. Spoon about 1 tablespoon of the prepared grits into each cup, pressing gently to form a compact base. Place the pan in the refrigerator to chill and set for 30 minutes.
  4. Season the shrimp: In a bowl, toss the peeled and deveined shrimp with olive oil, smoked paprika, cayenne pepper (if using), and minced garlic to ensure even coating.
  5. Sauté shrimp: Heat a skillet over medium heat and cook the shrimp for 2 to 3 minutes per side until they are pink and cooked through. Remove from the heat and let the shrimp cool slightly.
  6. Assemble bites: Preheat your oven to 375°F (190°C). Place one cooked shrimp on top of each chilled grit base in the muffin pan.
  7. Bake to finish: Bake the assembled bites in the oven for 10 to 12 minutes until they are heated through and slightly golden around the edges.
  8. Garnish and serve: Remove from the oven, garnish with chopped fresh chives, and serve warm as a delicious appetizer.
