Grit Bases
- 1 cup stone-ground grits
- 4 cups water
- 1 teaspoon salt
- 1/2 cup shredded sharp cheddar cheese
- 2 tablespoons unsalted butter
- 1/4 teaspoon black pepper
Shrimp Topping
- 1/2 pound shrimp (peeled, deveined, tails removed)
- 1 tablespoon olive oil
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1 clove garlic (minced)
- Chopped fresh chives for garnish
Instructions
- Prepare the grits: In a medium saucepan, bring the water and salt to a boil. Slowly whisk in the stone-ground grits, then reduce the heat to low and let simmer for 20 to 25 minutes, stirring frequently, until the grits are thick and creamy.
- Add cheese and butter: Stir in the shredded sharp cheddar cheese, unsalted butter, and black pepper into the grits until fully melted and combined. Remove from heat and allow to cool slightly.
- Form grit bites: Lightly grease a mini muffin pan. Spoon about 1 tablespoon of the prepared grits into each cup, pressing gently to form a compact base. Place the pan in the refrigerator to chill and set for 30 minutes.
- Season the shrimp: In a bowl, toss the peeled and deveined shrimp with olive oil, smoked paprika, cayenne pepper (if using), and minced garlic to ensure even coating.
- Sauté shrimp: Heat a skillet over medium heat and cook the shrimp for 2 to 3 minutes per side until they are pink and cooked through. Remove from the heat and let the shrimp cool slightly.
- Assemble bites: Preheat your oven to 375°F (190°C). Place one cooked shrimp on top of each chilled grit base in the muffin pan.
- Bake to finish: Bake the assembled bites in the oven for 10 to 12 minutes until they are heated through and slightly golden around the edges.
- Garnish and serve: Remove from the oven, garnish with chopped fresh chives, and serve warm as a delicious appetizer.
Notes
- You can prepare the grit bases a day in advance and keep them refrigerated until ready to use.
