Shrimp:

  • 1 pound large shrimp, peeled and deveined

  • 1 (15-ounce) can white beans (cannellini or great northern), drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon smoked paprika
  • ½ teaspoon crushed red pepper flakes (optional)
  • ½ teaspoon dried thyme
  • ½ cup low-sodium chicken broth
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped
  • Juice of half a lemon


Instructions

  1. Heat Olive Oil: Heat olive oil in a large skillet over medium heat.
