For the Enchiladas:
- 2 cups cooked shredded chicken
- 1 tablespoon olive oil

- 2 cloves garlic, minced
- 1 can (4 oz) diced green chiles
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1 cup sour cream
- 2 cups shredded Monterey Jack cheese
- 8 small flour tortillas
- Fresh cilantro for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C).
- Sauté onion: In a skillet over medium heat, sauté the onion in olive oil until soft.
- Add flavors: Add garlic, green chiles, cumin, salt, and pepper; cook briefly.
- Thicken sauce: Stir in flour, then whisk in chicken broth and simmer until thickened.
- Make sour cream sauce: Remove from heat, stir in sour cream.
- Prepare chicken filling: Mix chicken with 1/2 cup sauce and 1/2 cup cheese.
- Assemble enchiladas: Fill tortillas, roll up, place in baking dish.
- Bake: Pour remaining sauce over enchiladas, top with cheese, bake for 25–30 minutes.
- Garnish and serve: Garnish with cilantro if desired before serving.
Notes
- You can use rotisserie chicken for convenience.
