Description

This Skillet Sausage and Zucchini recipe is a quick and flavorful one-pan meal featuring savory browned sausage combined with tender zucchini, red bell pepper, and onion, seasoned with Italian herbs. Perfect for a wholesome weeknight dinner, it offers a hearty, balanced dish that comes together in just 25 minutes.

Ingredients

Scale

Sausage and Vegetables

  • 1 lb (450g) sausage (such as Italian or turkey sausage), casings removed
  • 2 medium zucchini, sliced into rounds
  • 1 red bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced

Seasoning and Garnish

  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish
  • Optional: Grated Parmesan cheese for serving

Instructions

  1. Heat the olive oil: Warm 1 tablespoon of olive oil in a large skillet over medium-high heat to prepare for cooking the sausage and vegetables.
  2. Cook the sausage: Add the sausage to the skillet, breaking it up into small pieces with a wooden spoon. Cook for about 5-7 minutes until browned and fully cooked through.
  3. Set aside the sausage: Remove the cooked sausage from the skillet and set it aside on a plate, leaving the flavorful drippings in the pan.
  4. Sauté onion and bell pepper: In the same skillet, add the diced onion and red bell pepper. Sauté for around 3 minutes until the onion becomes translucent and soft.
  5. Add garlic and zucchini: Stir in minced garlic and sliced zucchini to the skillet. Sprinkle with 1 teaspoon Italian seasoning, salt, and pepper. Cook for an additional 5-7 minutes, stirring occasionally, until zucchini is tender but not mushy.
  6. Combine sausage with vegetables: Return the cooked sausage to the skillet and mix well with the vegetables. Cook together for 2 more minutes to heat all ingredients through.
  7. Adjust seasoning: Taste and modify salt, pepper, or Italian seasoning as needed to suit your preference.
  8. Garnish and serve: Remove from heat, garnish with freshly chopped parsley, and serve with optional grated Parmesan cheese for extra flavor.

Notes

  • You can use turkey sausage for a leaner option or Italian pork sausage for richer flavor.
  • To make this gluten free, confirm that your sausage has no gluten-containing fillers.
  • Add a pinch of red pepper flakes for some heat if desired.
  • Serve alongside crusty bread or over cooked pasta or rice for a more substantial meal.
  • Leftovers store well covered in the refrigerator for up to 3 days.
