Description

These Slow Cooker Baby Carrots with Honey and Brown Sugar are a delightfully sweet and buttery side dish perfect for any meal. Tender carrots are slow-cooked to perfection, glazed with a rich mixture of honey, brown sugar, and warm spices, then garnished with fresh parsley for a pop of color and flavor.

Ingredients

Scale

Carrots

  • 2 pounds baby carrots

Glaze

  • 1/4 cup unsalted butter, melted
  • 1/4 cup honey
  • 1/4 cup light brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Freshly ground black pepper to taste

Garnish (optional)

  • Chopped fresh parsley

Instructions

  1. Prepare the Carrots: Place the baby carrots into the slow cooker, spreading them out evenly to ensure uniform cooking.
  2. Make the Glaze: In a small bowl, whisk together the melted unsalted butter, honey, light brown sugar, salt, ground cinnamon, ground nutmeg, and a pinch of freshly ground black pepper until well combined.
  3. Coat the Carrots: Pour the glaze mixture over the carrots in the slow cooker and stir gently to coat all the carrots evenly with the mixture.
  4. Cook: Cover the slow cooker with its lid. Cook on high for 3 hours or alternatively on low for 6 hours. Stir the carrots once or twice during the cooking process to redistribute the glaze and ensure even cooking.
  5. Finish and Serve: Once the carrots are tender and beautifully glazed, give them one final stir. Transfer to a serving dish and, if desired, sprinkle with chopped fresh parsley for a fresh, colorful garnish. Serve warm for best flavor.

Notes

  • For an extra burst of citrus flavor, add a splash of orange juice or a teaspoon of grated orange zest to the glaze mixture before cooking.
  • This recipe can easily be doubled to accommodate larger gatherings.
  • If baby-cut carrots are unavailable, peeled and chopped whole carrots can be used as an alternative.
