Chicken:

  • 2 pounds boneless, skinless chicken thighs

Marinade:

  • 1/3 cup olive oil
  • 1/4 cup fresh lemon juice
  • 4 garlic cloves, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper flakes (optional)

Additions:

  • 1/2 cup chicken broth
  • 1/2 cup sliced red onion
  • 1/2 cup pitted Kalamata olives
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley


Instructions

  1. Prepare the Chicken: Place the chicken thighs in the slow cooker.
  2. Make the Marinade: In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, pepper, onion powder, and red pepper flakes. Pour over the chicken.
  3. Add Ingredients: Pour in chicken broth, red onion, and olives.
