Broccoli:
- 1 large head of broccoli, cut into florets
Seasoning:
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon red chili flakes (adjust to taste)
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
- Zest of ½ lemon
- Juice of ½ lemon
- 1 tablespoon grated Parmesan cheese (optional)
Instructions
- Blanch Broccoli: Bring a large pot of salted water to a boil. Add broccoli florets and blanch for 2–3 minutes. Drain and dry.
- Prepare and Roast: Preheat oven to 425°F (220°C). Smash broccoli florets flat, place on baking sheet. Mix olive oil, garlic, chili flakes, salt, pepper, and lemon zest. Drizzle over broccoli. Roast for 20–25 minutes.
- Finish and Serve: Squeeze lemon juice over roasted broccoli. Sprinkle with Parmesan. Serve hot.
Notes
- For a vegan version, omit Parmesan or use a plant-based alternative.
- Add extra chili flakes for more heat.
- Makes a great side dish or low-carb snack.
