  • Salt and black pepper to taste
  • 1 tablespoon olive oil

For the Sauce:

  • 1 large yellow onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder

For Assembly:

  • 4 cups thinly sliced russet potatoes, peeled
  • 1 cup shredded cheddar cheese
  • 1 tablespoon chopped fresh parsley (optional for garnish)


Instructions

  1. Preheat oven: Preheat oven to 375°F (190°C).
  2. Sear beef: Season beef chops with salt and pepper. Sear in a skillet. Remove and set aside.
  3. Cook onions and garlic: In the same skillet, cook onions until softened, then add garlic.
  4. Make sauce: Sprinkle in flour, pour in milk and broth, add seasonings. Simmer until thickened.
  5. Layer potatoes and chops: In a greased baking dish, layer potatoes, sauce, beef chops, remaining potatoes, and sauce.
