Instructions
- Cook the pasta: Cook the pasta according to package instructions until al dente. Drain the pasta, reserving 1/2 cup of the pasta cooking water for later use.
- Sauté garlic and chili: In a large skillet, heat olive oil over medium heat. Add minced garlic and red chili flakes; sauté for about 1 minute until fragrant and aromatic.
- Add tuna: Incorporate the drained tuna into the skillet, gently breaking it apart with a spoon to combine evenly.
- Wilt the spinach: Stir in the fresh spinach leaves and cook for 2–3 minutes until they are wilted but still vibrant green.
- Add cherry tomatoes: If using, add the halved cherry tomatoes and cook for an additional 1–2 minutes to soften slightly.
- Combine pasta and sauce: Mix in the cooked pasta, gradually adding the reserved pasta water a little at a time to loosen and create a light sauce that coats the pasta.
- Season: Season the mixture with salt, freshly ground black pepper, and the juice of half a lemon to brighten the flavors.
- Serve: Serve the pasta hot, topped with grated Parmesan cheese if desired for an extra savory finish.
