Description

These Taco Tuesday Muffin Tin Stacks are a fun and creative twist on traditional tacos, layered in a muffin tin for easy serving. Ground beef or turkey is seasoned and combined with black beans, corn, and cheese, then baked until bubbly and delicious. Perfect for a family meal or party appetizer, topped with sour cream, salsa, and cilantro for extra flavor.

Ingredients

Scale

Meat Mixture

  • 1/2 lb ground beef or turkey
  • 1 tbsp taco seasoning

Fillings

  • 1/2 cup canned black beans, drained
  • 1/2 cup corn kernels (fresh or frozen)
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 cup crushed corn chips or tortilla chips

Toppings

  • Sour cream, for serving
  • Salsa, for serving
  • Chopped cilantro, for garnish

Other

  • Nonstick spray (for muffin tin)

Instructions

  1. Preheat and prepare muffin tin: Preheat your oven to 375°F (190°C). Lightly spray a muffin tin with nonstick spray to prevent sticking during baking.
  2. Cook the meat: In a skillet over medium heat, brown the ground beef or turkey until fully cooked, breaking it apart as it cooks. Stir in the taco seasoning and cook for another minute to combine the flavors well.
  3. Assemble the taco stacks: In each muffin cup, start with a spoonful of crushed corn or tortilla chips as the base, then add a layer of seasoned taco meat, followed by black beans, corn kernels, and shredded cheese. Repeat the layering if your muffin cups are deep, finishing with a top layer of cheese to ensure it melts nicely.
  4. Bake: Place the muffin tin in the oven and bake for 12 to 15 minutes, or until the cheese on top is melted and bubbly, and the stacks are heated through.
  5. Cool and remove: Remove the muffin tin from the oven and allow the stacks to cool for about 5 minutes. Gently loosen and pop out each taco stack using a spoon or small spatula to preserve their shape.
  6. Serve with toppings: Top each taco muffin stack with sour cream, salsa, and chopped cilantro or your favorite taco toppings. Serve warm and enjoy your fun and flavorful Taco Tuesday snack or meal!

Notes

  • You can swap ground beef with ground turkey or chicken for a leaner option.
  • Use fresh or frozen corn kernels; just make sure frozen is thawed before layering.
  • Feel free to add diced onions or jalapeños for extra flavor.
  • These stacks make great appetizers or a fun dinner and can be reheated in the oven or microwave.
  • Make sure to not overfill muffin cups as the stacks might be difficult to remove and bake unevenly.
