Chicken Fritters
- 1 1/2 lbs (3 large) chicken breasts, diced into 1/3″ to 1/2″ pieces
- 2 large eggs
- 5 Tbsp mayonnaise (about 1/3 cup)
- 1/3 cup all-purpose flour (or cornstarch or potato starch)
- 4 oz (1 1/3 cups) shredded mozzarella cheese
- 1 1/2 Tbsp chopped fresh dill
- 1/2 tsp salt
- 1/8 tsp black pepper (or to taste)
- Extra light olive oil or any high-heat cooking oil for sautéing
Instructions
- Prepare the Chicken: Using a sharp knife, dice the chicken breasts into pieces measuring about 1/3 to 1/2 inch thick. Set the diced chicken aside for later use.
- Make the Batter and Marinate: In a medium bowl, combine the eggs, mayonnaise, flour, shredded mozzarella cheese, chopped dill, salt, and black pepper. Stir well until the mixture is fully combined. Fold the diced chicken into this batter. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight to allow the flavors to marinate.
- Heat the Pan and Cook Fritters: Heat a large non-stick skillet over medium heat and add 2 tablespoons of oil. When the oil is hot, scoop heaping tablespoons of the chicken mixture using a flat ice cream scoop or spoon onto the skillet. Use the back of the spoon to gently flatten each fritter slightly. Sauté the fritters uncovered for 3 to 4 minutes on the first side until golden brown, then flip and cook for another 3 minutes until golden and cooked through.
- Repeat and Drain: Continue cooking the remaining fritters in the same manner, adding more oil if necessary. Once cooked, transfer the fritters to a dish lined with paper towels to absorb any excess oil before serving.
