Ingredients
Scale
Main Ingredients
- 2 tablespoons sesame oil
- 3 cups bite-size broccoli florets (7 ounces)
- 1 cup diced red bell pepper
- 1 cup sliced scallions (about 5)
- 1/3 cup low-sodium teriyaki sauce
- 1/4 cup water
- 2 tablespoons cornstarch
- 2 cloves garlic, grated
- 3 cups sliced cooked chicken
- 3 cups cooked brown rice
Garnish
- Toasted sesame seeds or toasted sliced almonds (optional)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
- Heat Oil and Sauté Vegetables: Heat the sesame oil in a large ovenproof skillet over medium heat. Add the broccoli florets, diced red bell pepper, and sliced scallions, cooking and stirring for 3 to 5 minutes until the vegetables soften slightly but remain vibrant.
- Prepare Sauce Mixture: In a measuring cup, whisk together the low-sodium teriyaki sauce, water, cornstarch, and grated garlic until well combined. This mixture will thicken as it cooks.
- Add Sauce to Skillet: Pour the teriyaki sauce mixture into the skillet with the cooked vegetables and stir thoroughly to coat all the ingredients evenly.
- Combine Chicken and Rice: Add the sliced cooked chicken and cooked brown rice to the skillet, mixing everything well so that the rice and chicken are coated with the sauce and combined with the vegetables.
- Bake the Casserole: Transfer the entire skillet to the preheated oven and bake for 15 minutes. This allows the flavors to meld together and the vegetables to become tender while heating the casserole through.
- Garnish and Serve: Remove the skillet from the oven and, if desired, sprinkle toasted sesame seeds or toasted sliced almonds on top as a garnish to add texture and a nutty flavor. Serve hot.
