Ingredients
Scale
Main Ingredients
- 1 tablespoon olive oil
- 1 pound chicken sausage, sliced (mild or spicy, depending on your preference)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 1/2 cups orzo pasta
- 1 can (14.5 oz) diced tomatoes (with juices)
- 3 cups chicken broth
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional, for heat)
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped (optional, for garnish)
- Salt and pepper, to taste
Instructions
- Cook the Chicken Sausage: Heat olive oil in a large skillet or sauté pan over medium-high heat. Add the sliced chicken sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set aside.
- Sauté the Onion and Garlic: In the same skillet, add the diced onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Cook the Orzo: Add the orzo pasta to the skillet, stirring to coat it with the onion and garlic. Pour in the diced tomatoes with their juices and the chicken broth. Season with dried oregano, red pepper flakes (if using), salt, and pepper. Bring the mixture to a simmer and cook for 10-12 minutes, stirring occasionally, until the orzo is tender and most of the liquid has been absorbed.
- Combine and Serve: Stir the cooked chicken sausage back into the skillet with the orzo. Remove the skillet from the heat and stir in the grated Parmesan cheese. Taste and adjust seasonings if needed.
- Garnish and Serve: Garnish with fresh chopped basil if desired and serve the tomato orzo hot for a delicious and comforting meal.
Notes
- You can use mild or spicy chicken sausage based on your heat preference.
- If you prefer a vegetarian version, substitute chicken sausage with sautéed mushrooms or plant-based sausage.
- For gluten-free option, use gluten-free orzo or substitute with another gluten-free pasta.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
- Adding the Parmesan cheese off the heat ensures it melts smoothly without becoming grainy.
