Bread and Spread
- 4 slices of whole-grain or ciabatta bread
- 1/4 cup pesto sauce (store-bought or homemade)
Filling
- 1/2 cup cooked turkey breast, sliced (deli turkey works well)
- 4 slices of fresh mozzarella cheese (or your cheese of choice)
- 1/2 cup fresh spinach leaves
- 1/2 tomato, sliced
Additional
- Olive oil (optional, for toasting)
- Salt and pepper to taste
Instructions
- Spread the Pesto: Spread a generous layer of pesto sauce on one side of each slice of bread to ensure a flavorful base for the sandwich.
- Assemble the Sandwich: On two of the pesto-coated slices, layer the turkey slices evenly. Add the fresh mozzarella slices on top of the turkey, followed by fresh spinach leaves and tomato slices. Season with salt and pepper to taste. Top with the remaining slices of bread, pesto side down.
- Toast the Sandwich (Optional): If you prefer your sandwich warm and toasted, heat a skillet over medium heat and add a drizzle of olive oil. Place the assembled sandwiches in the skillet and cook for about 3-4 minutes on each side, or until the bread turns golden brown and the cheese melts nicely.
