Description

A quick and flavorful Turkey Pesto Sandwich featuring sliced turkey breast, fresh mozzarella, pesto sauce, spinach, and tomato layered between whole-grain or ciabatta bread. Perfect as a no-cook or lightly toasted meal that’s ready in minutes.

Ingredients

Scale

Bread and Spread

  • 4 slices of whole-grain or ciabatta bread
  • 1/4 cup pesto sauce (store-bought or homemade)

Filling

  • 1/2 cup cooked turkey breast, sliced (deli turkey works well)
  • 4 slices of fresh mozzarella cheese (or your cheese of choice)
  • 1/2 cup fresh spinach leaves
  • 1/2 tomato, sliced

Additional

  • Olive oil (optional, for toasting)
  • Salt and pepper to taste

Instructions

  1. Spread the Pesto: Spread a generous layer of pesto sauce on one side of each slice of bread to ensure a flavorful base for the sandwich.
  2. Assemble the Sandwich: On two of the pesto-coated slices, layer the turkey slices evenly. Add the fresh mozzarella slices on top of the turkey, followed by fresh spinach leaves and tomato slices. Season with salt and pepper to taste. Top with the remaining slices of bread, pesto side down.
  3. Toast the Sandwich (Optional): If you prefer your sandwich warm and toasted, heat a skillet over medium heat and add a drizzle of olive oil. Place the assembled sandwiches in the skillet and cook for about 3-4 minutes on each side, or until the bread turns golden brown and the cheese melts nicely.
  4. Serve: Remove the sandwiches from the skillet, slice in half if desired, and serve immediately while warm, or enjoy as is for a fresh, no-cook option.

Notes

  • You can substitute mozzarella with other cheeses such as provolone or Swiss based on preference.
  • For a vegan version, replace turkey and mozzarella with plant-based deli slices and vegan cheese.
  • Store-bought pesto is convenient, but homemade pesto enhances freshness and flavor.
  • To keep sandwiches crisp, avoid adding tomatoes until just before serving if making ahead.
