Description

A refreshing and light Tzatziki Chicken Salad that features juicy oven-baked chicken breasts marinated in a homemade tzatziki sauce, served over a bed of mixed greens, cucumber, red onion, cherry tomatoes, and topped with crumbled feta cheese. Perfect for a healthy lunch or dinner with Mediterranean-inspired flavors.

Ingredients

Scale

For the Tzatziki Marinade

  • 1 cup Greek yogurt
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried dill
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Chicken

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil

For the Salad

  • 6 cups mixed salad greens
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup crumbled feta cheese

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the chicken.
  2. Prepare Marinade: In a small bowl, combine Greek yogurt, lemon juice, minced garlic, dried dill, salt, and black pepper to make the tzatziki marinade.
  3. Marinate Chicken: Place the chicken breasts in a resealable plastic bag, pour half of the yogurt mixture over them, seal the bag, and refrigerate for at least 30 minutes to infuse flavor.
  4. Heat Skillet: Heat olive oil in an oven-safe skillet over medium-high heat, readying it for searing the chicken.
  5. Sear Chicken: Remove chicken from marinade, shaking off excess, and sear each side in the skillet for 2-3 minutes until golden brown to lock in juices.
  6. Bake Chicken: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F and is cooked through.
  7. Prepare Salad: While the chicken bakes, toss mixed greens, sliced cucumber, red onion, cherry tomatoes, and crumbled feta cheese in a large bowl to create the salad base.
  8. Rest and Slice Chicken: Remove chicken from the oven and let it rest for a few minutes to retain juices, then slice it into strips.
  9. Serve: Place sliced chicken over the salad and drizzle with the remaining tzatziki yogurt mixture for an added burst of flavor.
  10. Enjoy: Serve immediately and enjoy your delicious, healthy Tzatziki Chicken Salad.

Notes

  • Marinating the chicken longer than 30 minutes (up to 2 hours) will enhance the flavor more deeply.
  • Use an instant-read thermometer to ensure chicken is cooked safely to 165°F.
  • If you don’t have an oven-safe skillet, sear the chicken in a regular skillet then transfer it to a baking dish for the oven step.
  • Feel free to substitute dried dill with fresh dill for an even fresher taste.
  • Leftover tzatziki can be stored in the refrigerator for up to 2 days.
