Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the chicken.
- Prepare Marinade: In a small bowl, combine Greek yogurt, lemon juice, minced garlic, dried dill, salt, and black pepper to make the tzatziki marinade.
- Marinate Chicken: Place the chicken breasts in a resealable plastic bag, pour half of the yogurt mixture over them, seal the bag, and refrigerate for at least 30 minutes to infuse flavor.
- Heat Skillet: Heat olive oil in an oven-safe skillet over medium-high heat, readying it for searing the chicken.
- Sear Chicken: Remove chicken from marinade, shaking off excess, and sear each side in the skillet for 2-3 minutes until golden brown to lock in juices.
- Bake Chicken: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F and is cooked through.
- Prepare Salad: While the chicken bakes, toss mixed greens, sliced cucumber, red onion, cherry tomatoes, and crumbled feta cheese in a large bowl to create the salad base.
- Rest and Slice Chicken: Remove chicken from the oven and let it rest for a few minutes to retain juices, then slice it into strips.
